Hi Jane, and welcome to V6 !
Sorting your projects alphabetically is easy. In your project view, stand with your cursor at the right edge of the name field. This will show you the filters tab. Click and you will see the fliter menu. You can choose to sort the project alphabetically in Ascending/descending order. (see image attached)
Please also note that the navigation bar has a search bar which allows you to search for any object by name. As you start typing your project name it will appear under the search bar and you can click it to be brought to it directly.
