I have adjusted the Interact Email to Case Bug rule "Specific". I am trying to find a way where users can link the newly created bug to an existing project through emails. There is a Work Item field on the Bug module not accessible through the workflow named Work Item that would be the perfect field to link the bug to the project. Any suggestions?

It is possible to do, but they would have to be fully licensed users. You would have to turn some input in the email into a new item, specifically a "link" to Related Work. You should see Related Work as an option deep in the New Item action.
