You can setup a custom view and a custom field (toggle) to do that - as we have in my organization.

Enable the time reporter to remove / hide line item in timesheets easily
My users would like the ability to hide projects that they are no longer working from in their timesheets.
A Select + Hide button would be useful to automatically add them into a hidden filter.
The Clarizen interface is not intuitive to use and teaching users how to use the filters is not practical.

I really like Guy's suggestion. Create a custom field call hide, add it to your timesheet views, and put a filter on all timesheet views to not include hidden items. The downside is that if there are multiple resources, if one hides then it will hide for all resources.
