The main difference here is really that Importance is a dropdown while Priority is a numerical field. If you are going to have fewer than 11 options for priority, I would likely use the dropdown to keep things simple. If you have a wider range of potential values or want priority to be calculated automatically based on other factors, I would use the numerical Priority field.

There are multiple columns available to show within the work plan - I'd like to understand the definition behind "Importance" and how that differs from "Priority".

Great thanks! I think that Importance would be the right column for my team, but am now wondering if there is any related system functionality to that feild? I.e. if I set something to critical importance - does that message get sent through to the resources? Or is it functionality to allow the project manager to stay on top of priorities?

There is no system related functionality, but you can create workflow rules that could email resources when set to critical or tie other functionality around this. Setting importance also creates a nice option for filtering when it comes to reports or views.
