We have set up custom actions in the ribbon of Timesheets and wish to hide it from select profiles. This doesn't appear to be available yet in the Profiles section, will it be available soon?

Unfortunately this feature is not available yet as you have already noticed. This should be coming soon though! Feel free to check back with us or speak to your Customer Success Manager about it. That way we can feedback to Product from multiple angles. :)

It's not as tidy as managing all from the Profile, but you can do this from the Action itself. (Please see attached file.)
Or you can achieve that by using the eVal criteria of the custom action:
Go to the advanced setting of "custom action" and set it to "hide if not matching the criteria"
