I know that if I don't assign a resource I get an alert about it. However, is there a recommended way to easily see all active tasks across projects for which a resource has not been assigned? I suppose I could create a custom task view or a report? What would you recommend?
Ideally it sure would be nice if when I selected Task Team View in addition to the generic "everyone" option on the left there was an "unassigned" option.

Unassigned option is not available but you can filter on this by creating a filter in Task module like this...
Resource = <Blank>
Even easier may be to go to the Resource column, click on the icon to the Right of the header to change the Filter/Sort and specify Filter 'Blank'. This will show you only Tasks where the Resource field is Blank.
