If you go back an edit your pick list field, you will see that you can set a default value. Just set on the "Easy" selection and you should be all set.

Default value if field is blank, for a custom pick list field
I created a new custom pick list field with three values, "Easy", "Moderate", and "Hard". I'd like to have any field that is left blank where the user has not picked a value, to be defaulted to "Easy". Is there a way to do this?
