Hi Richard,
You will need admin permissions in order to edit the Gantt layout. This will apply to all end users. Gantt columns can be configured in Settings>Layout>Work Item>Gantt Columns - this is where you can add and remove columns.
There isn't a setting that defaults printing in landscape mode, but depending on your printer settings, you may be able to change the format to landscape. A feature request for this has been submitted previously and Product has advised that they are shooting for next year.
