You would select to create a new object and then Task. If you do not see Task on the list, you could be running it on the wrong object. Recommend speaking with your PS consultant to assist.

I had a look through posts relating to this, but didn't find an obvious answer.
In my workflow I would like to create a new task if another task's state changes. However, under the new object list I can't find task as an item.

Ah, OK - so depending whether the workflow rule runs on a Task, Milestone or Project I can create tasks (or not). From what i can see only workflow rules based on Projects and Milestones can create new Tasks.
Shame I was going to set something along the lines of move subtask A to the same level as it's parent and create a new task below it. A custom action would do that, however, I was going to use TeamBoard colors to initiate a workflow rule. so we don't have to move on and off the Teamboard.
I am running into a similar issue. I have a workflow at the task level that allows me to creates a new task on the Parent Project, the run time criteria is set to "When a record is created, or when a record is edited and did not previously meet the rule criteria". If I change the run time to "Every time a record is created or edited" , the option to create a new task is no longer available. Is this normal behavior?
We are also needing the ability to use New Item to create a sub task
