Hello Jen,
I think your best bet is to create a custom action that does this. Custom actions can be run on up to 50 objects (50 projects in this case).

Can Replace Resource be done on more than one project at a time
is it possible to make the Replace Resource function available when selecting multiple projects or sub projects at once?
