You could create tasks for the sign-offs and assign the users that need to complete this. You could also use a custom object for document approvals.

Document Sign-Off Feature
It would be nice if there was a feature/workflow to allow for Project Managers to upload a document to a clarizen project and request electronic sign-off from a list of selective users. For example, this feature might look like me going into a project, uploading a document, and selecting this document for sign-off. I would then be able to select a list of internal/external users that would need to sign off on this document.
