Currently our system requires that a user double click on the "complete %" and then enter a %. Is there a way to create tasks that can be checked off as complete with one click? i.e. being able to add checklist items similar to Outlook or Asana tasks

You can go to the gear icon and select columns, then look for the % complete field in the right section of the popup and click the link in the Format column. That will give you the option to make % completion a toggle with once click completion.
