Do Not Update SFDC Synced Fields if Manually Set by User

We currently create projects by syncing from SFDC opportunities. We would like to stop the sync from updating certain fields if they have been manually set by a user. The fields should continue to sync if no manual update has been made. I have not been able to write a validation rule to prevent this update. Has anyone else set up something similar?
