Data Field Automation - Capturing the date for the start of a week

Good Day,

I am searching for a way to capture the date value of the Monday that a project was Activated.  For example If I set a project to 'Active' today on Thursday, March 17, 2022 then I want to capture the prior Monday date at the earliest date that the project work can be started.  Is there a way to do this?
