Parsing email for Interact

I've watched the tutorial, and read the help files, but am still having trouble. I got the Interact rules to work beautifully, but just have one piece left, and that's to parse some information from the incoming email to use as a field in the task that gets automatically created.

The incoming email would have a text body like what is shown below...and the text I am trying to parse and put into a task field is the 'John Doe' part of the email below. I have tried various ways of using the RIGHT function, etc. and still haven't gotten it to work. Any ideas??? This would be a GREAT help!!

"Hello Client Solutions1,
The following issue has been Assigned to you:
Please click here to access the issue information

Issue = HB15955
User = John Doe
Phone = (123) 456-7890

Summary = User not receiving emails from certain users
Description = Please log a high priority incident ASAP and escalate it. John Doe is not receiving emails from Kitchen Collections (our sister company). He is not receiving messages from the following people. He regularly receives messages from these people."

Sorry but the text editor in this forum jumbled all of that together. What I am getting at is, if the body of the email has the text "USER = JOHN DOE" on one of the lines, how do I parse out ONLY the 'John Doe' part so I can feed it to a custom field?

Hi Brian, 

If you're using variables for each of the items, such as User = John Doe, and have set the "User" variable to match the custom field type, for example, reference to object,   then when you select the update field action and select the custom field simply enter the variable name (in this case User) as the value for that custom field and it will automatically parse John Doe.
