manager too can make new task or change some criteria of project. so how do i keep a track of all such activities.

I would start by using this App: http://www.clarizen.com/appsmarketplace/item/Audit-Trail-For-Work-Items.html (required Professional Edition). An improved version of this will also be available specifically for the V6 release. If you want to track additional fields in the audit trail, this is also possible with customization.
